Franciscan University of Steubenville (OH) offers classes by mail. They come with tape recorded lectures, etc. Not sure if they currently offer Latin. The University itself does teach Elementary Latin and Greek. The Elementary Latin course's curriculums are based on the New Testament.

St. Gregory Society for the Mass, which is headed by Fr. Stravinskas (spelling?) offers courses in both Latin and Greek through the mail.
